Brussels Sprouts Salad Recipe
Description
These tiny cabbage-like vegetables are named after the Belgian city of Brussels. They are low in calories but high in many nutrients like fiber, vitamin K, vitamin C; rich in antioxidants and an excellent source of protein.
You can prepare lots of delicious dishes with them ; roasted, baked, fried, you name it…Or you can try them in a salad like this recipe.
Wash your Brussels sprouts to get rid of any dirt. Then cut off the tough stem end of each.
Next shred the Brussels sprouts. You can use a food processor or a grater if you don’t have a food processor.
Place the shredded Brussels sprouts in a bowl. Add dried cranberries, walnuts, pine nuts and toss everything together. Drizzle with olive oil and lemon juice. Season with salt & pepper and serve.
