Turkish Style Stuffed Zucchini
Description
You can make many different dishes from zucchini. It is a very healthy, low-calorie vegetable and contains vitamins, minerals, and antioxidants. It also has high fiber content and is easy to digest, especially if you have some GI issues like constipation.

Remove the top of the zucchinis with a knife, cut in half, and hollow them out with a vegetable corer. Rinse with water and set aside.

In a bowl, mix ground meat, onions, diced tomatoes, rice, dill, salt, and pepper.

Using your hands, stuff the hallowed zucchinis with the stuffing and arrange them in a pan. Drizzle with olive oil and add 2 cups of hot water. Close the lid and cook for about 20 minutes over medium-low heat.

Remove from the stove, transfer to a serving plate and serve with yogurt on top.
