  1. Preparation

    • Melt the butter in a nonstick pan over medium heat

    • Add green peppers and cook for 5 minutes stirring occasionally.

    • Add tomatoes, salt & pepper, cook for another 10 minutes.

    • Crack the eggs on top of it cooking for a further 2-3 minutes while stirring.

    • Remove from the heat, sprinkle the parsley, and serve immediately.
