Melt the butter in a nonstick pan over medium heat

Add green peppers and cook for 5 minutes stirring occasionally.

Add tomatoes, salt & pepper, cook for another 10 minutes.

Crack the eggs on top of it cooking for a further 2-3 minutes while stirring.

Remove from the heat, sprinkle the parsley, and serve immediately.
