Stovetop Turkish Pastry Recipe (Borek)
Description
“Borek” is Turkey’s one of the most popular dishes which can be eaten anytime of the day, with savory fillings like cheese,potato, spinach or ground meat. There are many varieties of “borek” that you can make from thin dough sheets. Phyllo dough sheets, which we call “ yufka” in Turkish,can be found in small shops in Turkey, where women make and sell them fresh. ( If you can’t find fresh yufka,you can also use frozen phyllo sheets from the frozen section of the supermarkets.)
There are many different ways of making “borek”. You can bake it in the oven;roll with the filling and fry in a skillet or layer the dough sheets in a pan with the filling inside and cook on the stovetop.

Smash the feta cheese with a fork in a bowl and mix with the chopped parsley for the filling. Set aside.
Whisk olive oil,milk and egg white in another bowl until they are smooth.
Brush 2 tablespoons of olive oil all over a large pan.
Divide each sheet of yufka into two equal pieces.
Line the first half of yufka sheet in the pan. Spread some olive oil mixture on top. Place the second half sheet on it. Spread the olive oil mixture again and add the cheese filling. Layer the third sheet,olive oil mixture again,and the fourth sheet on top. Spread the rest of the olive oil mixture with a spoon,brush the egg yolk all over and sprinkle 1 tablespoon of the black cumin.
Cover the pan with a lid and cook on the stove over low- medium heat for 15 minutes or until the bottom is golden. Flip it and cook for 10-12 more minutes. Remove from the heat and transfer it on a cutting board. Slice it into triangles and serve!
