Oven Roasted Eggplant with Tomato,Garlic & Cheese
Description
During our visit to southeastern part of Anatolia, we visited the family farm of our close friends. We had a chance to pick fresh vegetables and fruits from their veggie garden. I prepared this recipe with the eggplants that I picked by myself.

1- Trim the head of the eggplants and cut into 1/2 inch thick rounds. If it is a big eggplant,you can cut the rounds into halves
2- Preheat the oven to 380 degrees Fahrenheit
3- Arrange the eggplant slices on a baking sheet and lightly brush 3 tablespoons of olive oil on top
4- Bake for 20- 25 minutes or until lightly browned
5- Meanwhile mix tomato,green pepper,garlic,parsley,salt & pepper and 1 tablespoon of olive oil in a big bowl and set aside
6- Place the baked eggplant slices at the bottom of a deep baking dish
7- Spread the tomato mixture on top. Sprinkle the shredded cheese and bake in the 400 degrees Fahrenheit oven for 20-25 minutes or until the top is golden
8- Serve with rice or as a side dish with any type of main courseBon Appetit!
