Prepare the spinach filling:
1- Put olive oil in a deep pan. Add onions and garlic. Saute gently over medium heat
2- Add diced tomatoes and salt stirring occasionally
3- Add spinach leaves and cook for 3-4 more minutes stirring continuously
4- Remove from the heat and set aside5- Whisk egg whites,milk and vegetable oil in a small bowl and set aside
6- Preheat the oven to 380 degrees Fahrenheit
7- Cut the “ yufka” into quarters. You will have 8 large triangles
8- Spread the egg white sauce on the triangle sheet using a pastry brush
9- Divide the spinach filling into small pieces and spread it towards the large end of the triangle
10- Start rolling from the large side of the “yufka” sheet till the end and swirl into a rose shape
11- Repeat the process for each triangle sheet
12- Arrange the rose shaped pieces on a baking tray
13- Brush the egg yolk on top and sprinkle on nigella seeds
14- Bake for 30-35 minutes or until golden brownBon Appetit!
