1-Peel the eggplant in stripes and trim off the stem. Cut it half lengthwise and then into 1/2 inch slices
2-Preheat the oven to 425 degrees Fahrenheit
3-Mix olive oil,minced garlic,salt and pepper in a big bowl
4-Add eggplant slices and toss until all the slices are evenly coated with the olive oil mixture
5-Arrange the eggplant slices on a baking sheet6-Bake for 25 minutes turning once until both sides are lightly browned
7- Sprinkle chopped parsley on top and serve immediatelyBon Appetit!
