Artichoke Hearts with Olive Oil
Description
You can braise, steam, stuff or bake the artichokes. In Turkey, you not only eat the hearts of the artichoke, but you also eat the entire bottom.
It is a very popular and delicious dish, but you need to know how to cut and peel the vegetable. Here, I’m gonna share a recipe that you can prepare from the hearts, which is easier to find in the US.
You can use frozen, canned or jarred artichokes.

Put the olive oil in a pan, sauté with the onions over medium heat until the onions turn pink.

Add tomatoes, salt, and sugar, stir them occasionally for 3-4 minutes.

Add artichoke hearts, peas, carrots, and 2 cups of hot water.

Cover and cook over medium-low heat for about 12-15minutes.

Remove from the heat. Add lemon juice.

Let it cool down to room temperature.

Garnish with parsley or dill and serve.
