The beetroot is the taproot portion of the beet plant. The pigments in red beets are very powerful. Today, some manufacturers use beetroot as a dye to replace synthetic coloring in processed food. Because of this effect, expect stains on your hand or overpower the color of other foods.

Beet Salad with Feta Cheese

Ingredients

Preparation

  1. Place the beets in a pot and cover with water. Bring to a boil, reduce the heat and cook for 35-40 minutes or until they are tender. Peel the beets after they are cool enough to touch. Cut them into slices. ( You can always use canned beets if you want to save time).

  2. Arrange the beet slices on a serving plate. Top with shallot slices, feta cheese cubes and chopped parsley.

  3. Whisk olive oil, lemon juice, garlic and balsamic vinegar in a small bowl. Drizzle your dressing on top and serve!
