Bulgur,also called bulgur wheat,is one of the popular dishes in Middle Eastern and Mediterranean regions and is a healthier substitute for rice pilaf.Â
Lentils are an excellent source of plant-based protein and fiber. You can make soups,salads or meals with them and they can give you the same amount of protein as meat.Â
Bulgur pilaf with green lentils is a delicious and healthy recipe with lots of nutrients and fiber. It makes a perfect side dish for your main course or even a main dish by itself.Â

Before starting to cook lentils, soak them in cold water for at least 1 hour. Drain and place them in a pan with 2 cups of cold water,bring to a boil and cook for 20-25 minutes over medium heat. Drain and set aside
Put olive oil in a pan. Saute with onions,tomatoes,salt and tomato paste over medium heat stirring occasionally
Add the bulgur wheat and 1 1/4 cups of hot water. Half cover and bring to a boil. Then cook over low heat until all the liquid has been absorbed
Remove from the heat,sprinkle dry mint and let the pilaf rest for 10 minutes
Add cooked green lentils and fluff with a spoon
Garnish with fresh mint leaves and serve
