Description
This is a traditional Mexican dish of sautéed yellow squash, zucchini, onions, and peppers with corn and tomatoes. This can be a vegetarian side dish for any type of Southwestern main course; or a filling for tacos or burritos with cheese on top.

Heat the olive oil over medium heat in a large skillet. Add the onion and the garlic and sauté for 5 minutes until the onion is slightly brown. Add different types of peppers, yellow squash, zucchini, and stir to combine. Cover and simmer for 10-15 minutes until all the ingredients are soft. Stir in the corn, tomatoes, green chiles and continue to sauté for 5 more minutes. Remove from the heat and garnish with parsley. Serve immediately. If you prefer it with tacos, add grated cheese on top.
