It was invented in Texas (Texas Caviar) and spread all over the US. It is great for New Years since it has black-eyed peas for good luck. Eating black-eyed peas on New Year’s Day to bring prosperity in the new year is a Southern United States tradition. In reality, this recipe is not just for New Years, it’s actually a favorite at tailgates and potlucks.
What is Texas Caviar?
Cowboy caviar is a popular chip dip that originated from Texas and has some Dallas history. It was created by Helen Corbitt, the legendary culinary director at Neiman Marcus in downtown Dallas, in the 1940s.
It makes a great appetizer dip, salad, or side dish. This Texan recipe doesn't feature caviar but includes healthy ingredients like beans, corn, bell pepper, red onion, tomatoes, and cilantro.

How to Prepare Texas Caviar Recipe

Combine black-eyed peas, black beans, corn kernels, tomato cubes, bell pepper cubes, chopped red onion and chopped cilantro in a big serving bowl.

Whisk the dressing ingredients together in a cup.

Drizzle the dressing over the serving bowl and stir everything until well mixed.

Tips for Making Texas Caviar Recipe (Cowboy Caviar)
After adding the dressing, cover and refrigerate for at least 4 hours (or overnight) if you have time. This gives the salad a chance to “marinate” in the delicious dressing!

It got the name of “Texas caviar” because that's where it was created – by a woman named Helen Corbitt, the legendary culinary director at Neiman Marcus in downtown Dallas, in the 1940s. What is this? She actually created the dish in an attempt to add more flavor to black eyed peas for a New Years Eve dish (they are sometimes eaten on NYE for good luck + prosperity in the new year!). She first served the dish on New Year's Eve at the Houston Country Club. When she later served it at the Driskill Hotel in Austin, Texas, it was given its name, "Texas caviar," as a humorous comparison to true caviar, an expensive hors d'oeuvre of salt-cured fish roe.
Caviar can be a great treat as it is rich in protein and it contains a high level of a few essential vitamins and minerals.
Fine caviar is best served simply, possibly alongside toast points or bland, unsalted crackers. Some people even like to eat it straight out of the tin the caviar came in to get the true, unadulterated taste of the fish eggs. If budget allows ( it is a luxurious delicacy), serve at least one ounce per person. Crème fraîche, shaved hard-boiled egg and chives may be served alongside.
