Eggplant with Meatballs (Eggplant Kebab)
Description
I’m a huge fan of eggplants and prepare different recipes. They can be grilled, fried, stuffed, or baked. This recipe can also be named “Eggplant Kebab”.

Preparing the meatballs:
Combine ground meat, grated onion, bread crumbs, cumin, salt, and pepper in a large bowl. Knead it with your hands until everything mixes well. Roll the mixture into small balls and set aside.
Mix olive oil, garlic, salt, and pepper in a small bowl and set aside.
Preheat the oven to 400 degrees Fahrenheit.
Peel the eggplants in stripes and cut thin slices ( 1/2 inch) lengthwise. Wash and pat dry them with a paper towel. Place them on a baking pan and brush the olive oil mixture all over the eggplants. Bake for 7-8 minutes in the oven. Set aside to cool down.

Wrap each meatball with one eggplant slice. Arrange them on another baking pan with mini peppers, potatoes, and tomatoes. Drizzle with olive oil and cover the tray with aluminum foil. Cook for 35 minutes at 400 degrees Fahrenheit. Then remove the foil and continue cooking for 10 more minutes.

Remove from the oven. Serve with rice.
