Green Lentil Soup with Cut Linguine Pasta

You can make soups, salads or different types of recipes with them and they can give you the same amount of protein as meat. They are easy to cook and a healthy choice for a meal.

Before starting to cook green lentils, soak them in cold water for at least 1/2 hour to save cooking time.
Put olive oil in a deep pan, saute with the onions over medium heat until the onions turn pink.
Add flour stirring frequently, add tomatoes and salt. Add hot water, bring to boil, and add drained lentils. Half cover and cook for 10-15 minutes. Cut linguine pasta into small pieces and add to the soup. Half cover and cook for 10 more minutes over medium-low heat. You can add more hot water according to your taste, condensed or thin. Remove from the heat. Garnish with basil or mint leaves. Serve immediately.
