Description
Before you start cooking, you need to wash the leeks very carefully. They are sandy and dirty, so be sure to wash them thoroughly. First, remove the head of the leeks and slice them with a sharp knife. Soak them in cold salty water for a while. Then rinse them under running water to get rid of the dirt hiding in their layers.

Put olive oil in a large pan and saute with onions until they turn pink. Add flour stirring frequently. Add potatoes, carrots, leeks, salt, and hot water. Half cover and cook for about 20-25 minutes over low heat. Add milk stirring continuously until the soup is slightly thickened and removed from the heat. Puree the soup with a hand blender. Garnish with fresh mint leaves and serve immediately.
