Description
Medlar Tree belongs to the Rosaceae family (Mespilus germanica) and they have very attractive orange-yellow fruits.
I decided to try this recipe after our Medlar Tree in our backyard, has developed fully in spring for the first time. Medlars have to be soft to touch to be ready to eat
Taking out the seeds and peeling the skin is the most time-consuming part in this recipe, but believe me, it is gonna worth it!

Wash the medlars, take out the seeds and peel the skin with a sharp knife.

While doing this step, collect them in a bowl full of water with lemon juice, so they don’t get dark.
When fruits are ready, rinse the medlars, place in a large pan, add sugar and water.
Cook on medium heat until the sugar melts.
Continue on low heat for about 40-45 minutes until the preserve thickens.
Add lemon juice, continue heating for a couple of more minutes.
Remove from the heat.
After it cools down, ladle into jars and store in a cool and dark place until needed.
