Okra with Olive Oil
Description
Okra is mostly used fried or grilled in the US. It is also largely used in Turkish cuisine and like most other vegetable Mediterranean dishes, this recipe contains olive oil and other simple ingredients which makes it delicious and healthy.

Trim the caps of the okra conically and wash them. Set aside.
Put the olive oil in a pan, sauté with the onions over medium heat until the onions turn pink.
Add tomatoes, salt, and sugar, stir them occasionally for 5 minutes.
Add okra, lemon juice, and 2 cups of hot water.
Cover and cook over medium heat for about 20 minutes.
Remove from the heat.
Let it cool down to room temperature.
Garnish with parsley and serve.
