Oven Roasted Branzino
Description
Branzino ( European Sea Bass) is a mild-flavored white fish native to the waters off Europe’s western and southern and Africa’s western coasts. You can grill,bake ,fry or steam the fish and it is mostly served whole.
Ingredients
Preparation

Preheat the oven to 425 degrees Fahrenheit

Rub inside and outside of each fish with olive oil

Use a sharp knife to cut 2-3 diagonal slits on the skin of the fish

Insert lemon and red onion slices in the slits

Prepare the seasoning:Mix salt,black pepper,red pepper,oregano leaves,dried rosemary,dried basil,dried onion in a small bowl

Place parchment paper on a baking dish and arrange the fish on it

Sprinkle the seasoning on top

Roast for 13-15 minutes in the oven

Remove from the oven and garnish with more lemon slices and fresh rosemary leaves

Serve immediatelyÂ

Wine Recommendations:Â
With this delicate fish I recommend Pinot Grigio, Gruner Veltliner or a Vinho Verde from Portugal. Sauvignon Blanc is also an option, but try French or Californian. The tropical notes of the New Zealand variety might be too heavy.
I paired it with Solena Pinot Gris 2019 : an Oregon , Willamette Valley grown Pinot Grigio. This wine has notes of pear and a hint of lemon zest with creamy notes lingering on the finish.
