Oven Roasted Delicata Squash
Description
Delicata squash is a variety of winter squash with cream-coloured cylindrical fruits striped in green or orange. It is also known as peanut squash, Bohemian squash, or sweet potato squash.
This easy,sweet delicata squash recipe is a delicious fall side dish! The squash has a thin and edible skin, so no need for peeling.

1- Slice down lenghtwise through the center of the squash using a sharp knife. Use a spoon to scrape out and discard the seeds and the flesh
2- Place squash halves on a cutting board and cut crosswise into 1 inch thick slices. Transfer them into a large bowl
3-Melt the butter in a skillet ,add salt and pepper
4- Add melted butter to the bowl and toss to coat the squash slices evenly
5- Preheat the oven to 425 degrees Fahrenheit
6- Arrange the squash slices on a baking sheet leaving an even amount of space between them
7- Roast until the squash slices are golden brown at the bottom for about 15 minutes. Flip each slice and continue cooking for 10 more minutes until the other side is golden brown
8- Remove from the oven. Transfer to a serving plate. Garnish with parsley and sprinkle parmesan cheeseBon Appetit!
