Oyster Mushroom Recipe
Description
Oyster mushrooms come bundled in groups, all attached to the same stem. They usually don’t need much cleaning; you can even use a damp paper towel or soak them in cold, salty water for a couple of minutes and dry them out quickly. Because they can act like sponges and if loaded with water, may lose their flavor. Using a sharp knife, carefully cut around the central stem and the individual caps fall away.

Heat olive oil in a large skillet over medium heat. Add onions, garlic, turmeric, and sauté until softened stirring frequently. Add mushrooms, grated tomatoes, chili powder, and salt. Bring to boil and lower the heat. Simmer for 10-12 minutes. Remove from the heat and garnish with parsley. Serve immediately as a side dish or by itself.
