Roasted Vegetables with Pomegranate Seeds
Description
This is a very easy, delicious, and nutritious side dish to enjoy during the festive season. You can use any kind of vegetables like carrots, potatoes, butternut squash, Brussels sprouts, eggplants, peppers, celeriac, etc. depending on your taste.

Mix olive oil, garlic, salt, and pepper in a small bowl. Wash, peel and cut all the veggies into cubes. Put them in a big bowl, toss everything together with an olive oil mixture. Spread them into a baking pan.

Bake at 400 degrees Fahrenheit for 30 minutes. Cover with aluminum foil and bake for 10 more minutes. Remove from the oven. Sprinkle pomegranate seeds and garnish with parsley and basil. Serve immediately with your favorite main dish.
