Description
A mushroom is the fleshy, spore-bearing fruiting body of a fungus, typically produced above ground, on soil ( Wikipedia). There are lots of edible mushrooms in the world. They are a rich, low-calorie source of fiber, protein, and antioxidants. They make a delicious side dish or their meaty texture and earthy flavor give an extra taste to whatever dish they are added. Portabella Mushrooms are one of them and these are the most commonly consumed mushrooms in North America.
This recipe makes a great vegetarian appetizer!

Preheat oven to 380 degrees.
Remove stems from mushrooms, wash them and dry with a paper towel.

Place the mushroom caps on a non-stick baking sheet.
In a bowl, mix diced tomatoes, garlic, olive oil, salt and pepper.
Spread this mixture into the mushroom caps and cover the top with cheese.

Bake until the tops are golden, about 20-25 minutes.
Remove from the oven, garnish with parsley and serve immediately.
Tip: You can make the same recipe with baby bella mushrooms if you prefer to have a bite-size appetizer.
