Description
The carrot is a root vegetable, typically orange in color. But they also come in other hues like purple, yellow, red, and white. They are a great source of vitamin A, with one serving providing 184% of your daily value. They are also rich in vitamins (C, K1, B6), calcium, iron, potassium, and antioxidants like lutein and zeaxanthin which are concentrated in the central part of the retina and well known for protecting the eyes.

Put olive oil in a large pan and saute with onions and garlic until they turn pink.

Add flour stirring frequently

Add tomatoes and salt. Continue stirring.

Add carrots and hot water. Half cover and cook for about 20-25 minutes over low heat.

You can continue cooking until the soup is slightly thickened. Remove from the heat.

Puree the soup with a hand blender. Ladle the soup into bowls and decorate with a tablespoon of heavy cream.

Garnish with fresh mint leaves and sprinkle with sunflower kernels.
