Description
This comforting, creamy soup recipe is perfect for the chilly weather and a great start for your lunch or dinner. It can be a full meal by itself if you want something light and delicious.
I prefer making it with fresh tomatoes, but if you have limited time, you can always use canned tomatoes.

Melt butter, add olive oil, and saute with flour in a large saucepan. Add salt according to your taste and add grated tomatoes stirring frequently. Half close the lid and cook for about 15 minutes over low heat. Add milk stirring occasionally and remove from the heat after 2-3 minutes ( you can add more milk if you think that the soup is too thick). Puree the soup with a hand blender. Garnish with fresh mint leaves and grated cheese if you desire.
