Turkish Crispy Cheese Rolls (Sigara Boregi)
Description
“Borek” has a very special and large place in Turkish cuisine. There are many varieties of “ borek” that you can make from thin dough sheets.
This recipe is one of the easiest ones among these varieties and is great as a starter or finger food. Phyllo dough sheets, which we call “yufka” in Turkish, can be found in small shops in Turkey, where women make and sell them fresh.
If you can’t find fresh “yufka“ like me, you can also use frozen phyllo sheets from the frozen sections of the supermarkets.

Bring the frozen dough sheets to room temperature.
Smash the feta cheese with a fork in a bowl and mix with the chopped parsley for the filling. (You can always create your own filling. It can be potato, spinach, ground meat, and more!)
Place one phyllo sheet on a clean and dry cutting board.
Put 1 tablespoon of the cheese filling on the sheet.
Fold the sides and roll it up.
Do the same for all the dough sheets.
Heat olive oil in a pan over high heat and fry the cheese rolls for a minute on each side or until they get golden.
Transfer them on a paper towel to get rid of the excess oil.
Serve immediately.
