Description
This is a very popular Turkish vegetarian recipe which can be a tasty cold appetizer or a delicious finger food. You can make them beforehand and keep them in the refrigerator for several days.

Wash the red lentils and transfer them to a saucepan. Add water and bring to a boil. Half cover and cook until they are soft and tender for about 15 minutes over low heat. There should be a little bit of water remaining after you turn off the heat.Â
Add fine bulgur and stir everything together. Cover and let it stand for 30 minutes. The bulgur will absorb the extra liquid and become soft while waiting.Â
As the mixture cools down,put olive oil in a pan,add yellow onion,garlic,tomato paste and salt. Saute until the onions turn pink brown.Â
Add onion mixture,chopped green onions,chopped parsley,cumin and red pepper to the lentil mixture and mix well. Drizzle with olive oil.Â
Using a piece of mixture every time,shape them in your palm and place them on a serving plate with lettuce leaves. Garnish with lemon slices and serve.Â
