Yogurt soup or “yayla soup” is a traditional Turkish soup which is basically made with rice,yogurt and dried mint.

Mix yogurt, egg yolk, flour, and rice in a deep pan and whisk well.

Add 4 cups of cold water and place it over medium heat.

To prevent curdling the yogurt, you need to stir continuously until boiling. Add salt after it starts boiling.

Half cover and simmer for about 15 minutes, stirring frequently until the rice softens. Remove from the heat.

Melt butter in a small pan and add dried mint.

Drizzle butter and mint mixture on top of the soup and serve immediately.

Note
1-Cooking the rice:
You can use any type of white rice for this recipe but long-grain rice like jasmine or basmati would work better. Remember that using different kinds of rice might affect the cooking times.
2-Creating the yogurt soup base:
Measuring the ingredients and whisking them together until evenly blended is very important. You also need to stir the soup continuously while cooking to prevent the curdling of the yogurt. If you think that the soup is too thick, you can slowly add more water. Add salt after it starts boiling.
3- Serving the yogurt soup:
Laddle the soup into bowls, and add the butter-mint sauce on top. Serve immediately!
You can refrigerate it for up to 3 days if you have leftovers. Make sure to store it in an airtight container. It will get thick in the fridge, so remember to add water to adjust the consistency while reheating.
4-Additional variations:
You can garnish with fresh mint leaves or red pepper flakes if you want more flavor. It is incredibly healthy, filling and can be served with different kinds of bread.
